  1) Hot food held at 135° or greater; cold food held at  41° or  below.
  2) Raw animal food separated from other ready-to-eat food and raw ready-to-eat food
  3) Observed date marking on time/temperature controlled for  safety foods.
  4) Handwashing by employees, gloves used while handling ready to  eat foods.           
  5) Sanitizer, test kit, and thermometer are available.
  6) Approved equipment for transport of food off premises for  catering.
   
  Kitchen equipment / utensils were clean and  maintained.                              Restrooms are very clean.
   
  Observation: I checked the temperature of the walk-in cooler. It read approximately ~ 40/41°. This is at the upper end of the
  cooling temperature for this walk-in cooler. I discussed what the temperature of the walk-in cooler should be with the cook
  and the owner. This cooler temperature must be lower to effectively cool down and maintain proper temperatures of time/
  temperature controlled for safety foods. Recommended that refrigeration technician check this cooler.
